You should be able to become a Jedi after escaping Taris. Malek blows up the planet after you rescue Bastila, but you escape. You go to Dantooine and you should start your Jedi training there. how quickly you become a jedi depends on your alignment I think, if your on the dark side and you can't convince the jedi masters that your on the light side, that could delay your training.
